ELEVAGE: Hand picked grapes were crushed and dstemmed into a one ton bin to macerate for 3 days before pressing. Settled juice was moved to stainless steel where fermentation, including full malolactic, continued over about nine months. In September of 2021 the wine was racked and bottled by hand without fining or filtration.

TASTING NOTE:Hints of white cherry and fennel in the nose, dry, soft and bright on the tongue, cleansing acid with lime and cherry fruit.

FOLTS FARM VINEYARD: In Keuka Park, New York on the western shore of Keuka Lake, fifth generation grapegrower Adam Folts maintains fifty acres of native, hybrid and vinifera vines. Grapes from these vineyards produce wine with vivid fruit and bright, chalky acids.
