Soil: Deeper loam over shale and limestone
Grape: 100% Riesling
- Crushed and destemmed
- Ambient Yeast

- Unfined and Unfiltered
ELEVAGE: Pressed, settled and browned juice was pumped into a single stainless
steel tank to ferment via ambient yeast. Fermentation continued into July 2017,
including full malolactic fermentation. In November the wine was racked off its lees
and then, in May of 2018, it was gravity bottled by hand without fining or filtration.
No sulfites were added at bottling.
TASTING NOTE: Crushed lime and pollen on the nose. Lightly tannic with lime and
necterine flavors and a lingering shale tinged finish. The wine is completely dry with
firm acid structure.
