2017 CHARDONNAY
Lamb's Quarter Vineyard

Total sulfite addition: 40 ppm
Grape: Chardonnay
Soil: Deeper loam over shale and limestone


ELEVAGE:Grapes were crushed, destemmed and allowed to macerate for two days. Pressed juice was allowed to settle and brown before being moved to stainless steel to ferment via ambiant yeast. Fermentation, including full malolactic, continued into September of 2018. In August of 2019, after 22 months on the lees, the wine was racked and gravity bottled by hand without fining or filtration.

TASTING NOTE: 2017 Eminence Road - Chardonnay - Lamb's Quarter Vineyard - Flint and marzipan on the nose, some weight in the mouth with juicy acids and pear fruit. A gentle spritz, orange peel and wet stone on the finish.

LAMB'S QUARTER VINEYARD: In and around Lodi, New York on the eastern shore of Seneca Lake, grower Mark Wagner maintains nearly seventy acres of vines contained in six separate plots with soils mostly composed of deeper loam over shale and limestone. Green mulching and cover crops are used to manage weeds and vines are meticulously cared for with an eye towards sustainability. These vineyards produce classic Finger Lakes wines with wonderful balance and clarity.
