2019 Cabernet Franc - Elizabeth's Vineyard

TASTING NOTE: Raspberry, cherry, horse saddle and graphite aromas. In the mouth, sweet rasperry fruit, oak spice and big chewy tannin. Bright acid and firm tannin carry finish.

ELEVAGE: Hand picked grapes were foot crushed and put whole cluster into one ton bins to ferment with once daily punchdowns. After twenty-six days the grapes were pressed and settled juice was moved to old French and American oak barrels to complete fermentation. The fermentation would not go dry so, in October of 2020, the wine was racked out of barrel and into tank with lees reserved from the Lamb's Quarters cabernet franc barrels. In June of 2021 the wine was racked and bottled by hand without fining or filtration.

VINEYARD: Located in Hector, New York on the eastern shore of Seneca Lake, this west facing vineyard is composed of shallow silt loam soil over fractured shale on a slope leading to some of the lake's deepest waters. Lovingly farmed by second generation grower John Leidenfrost and his daughter, Elizabeth, the vineyard's privileged exposure and thin, shale laden soil produce wines of great depth and backbone.
