Grapes: 96% cayuga white, 4% noiret
Alcohol: 10.5%
Total added sulfite: 40 ppm
Ingredients: Grapes, yeast, sulfite Crushed and destemmed
Stainless steel for 12 months
Unfined and unfiltered
Farming: Conventional/sustainable
Vineyard: Leidenfrost Vineyards - Seneca Lake - Hector - west facing, steep slope
Soil: Shallow silt loam over fractured shale


TASTING NOTE: Strawberry, flint, white pepper, powdery shale, dry with silky acids.

ELEVAGE: Grapes were crushed, destemmed and pressed. Settled juice was moved to stainless steel where fermentation, including full malolactic, continued over about seven months. In August of 2024 the wine was racked off its lees and bottled without fining or filtration.

MISCELLANEOUS: This blended rose is based primarily on the cold-hardy grape cayuga white which dates back to 1945. A cross between seyve-villard (seyval) and schuyler - which is itself a cross between zinfandel and Ontario zinfandel - cayuga white is planted throughout the Finger Lakes and is a relatively reliable producer and also an exceptional wine grape. The blush of red and subtle berry flavors come from a splash of noiret - a deeply colored, high acid, pepper-scented hybrid grape.
