2020 Sauvignon Blanc - Elizabeth's Vineyard

Dry White Table Wine

Grape: 100% Sauvignon Blanc
Alcohol: 13.3%
Total sulfite addition: 40 ppm
- Crushed and destemmed - 2 day maceration
- Stainless steel tank for 11 months
- Unfined and unfiltered
- Farming: Conventional/sustainable
- Vineyard: Seneca Lake, west facing, steep slope
- Soil: Shallow silt loam over fractured shale

TASTING NOTE: Grapefruit, cut grass and caramel nose. Citrus and honey in the mouth, big wine, vibrant, dry, with chalky acid.

ELEVAGE: Grapes were crushed and destemmed into bin to macerate for two days. Pressed juice was settled and browned for two days and then pumped to stainless steel to ferment. Fermentation, including full malolactic, finished in July of 2021. In September the wine was racked out of the tank and bottled by hand without fining or filtration.
